Spaghetti with Creamy Pesto and Plain Ricott’
A super creamy pesto pasta that is also extremely easy to make. This could be your go-to recipe when you don’t feel like cooking but still want to eat something fresh and comforting.
- 100g Ricott’ plain
- 40g water
- 20g fresh basil
- 5g lemon juice
- 30g olive oil
- 1g fresh garlic
- 10g nutritional yeast (optional)
- Salt to taste
- Pepper to taste
- 200g Spaghetti (gluten free option) or your choice of pasta
- Heat the pasta water. Blend all the ingredients, except the pasta, in a blender on high speed until you obtain a creamy sauce. Add salt or pepper to taste.
- Cook the pasta to your liking and then drain. Add the sauce and serve. You can eat the pasta as is or add plain Ricott’ or grilled vegetables as toppings.
